Wild Jack Chilaquiles
Ingredients:
12 corn tortillas
1/2 cup Jack Del Fuego - Wild Jack hot sauce
2 medium sized tomatoes
1 jalapeno pepper
2 garlic cloves
1/2 white onion
1/2 cup cheese
cilantro chopped
1/2 cup vegetable oil
STEP ONE
Heat
STEP TWO
In a blender, combine achiote paste, chipotle peppers, vinegar, garlic, lime juice, Jack Del Fuego - Black Jack hot sauce, oregano, cumin seeds, salt and pepper. Blend well until smooth.
STEP THREE
Pour sauce over the pork in a bowl and cover with plastic wrap. Marinate in the fridge for at least 2 hours.
STEP FOUR
Remove the pork from the marinade. Grill over high heat until charred and just cooked through, 2 to 4 minutes. Transfer to the carving board and let rest for 5 minutes.
STEP FIVE
Serve with sliced pineapple, red onion slices, chopped cilantro and corn tortillas.
